- 1 ½ cups kale, shredded
- 1 red bell pepper, diced
- ½ cup Sunbest Natural Raw Sunflower Seeds
- ¼ cup Sunbest Organic Flax Seeds
- ½ cup Sunbest Organic Tricolor Quinoa
- ¼ cup olive oil
- 2 Tablespoons avocado oil
- the juice of 2 lemons
- salt, to taste
Heat a medium saucepan over high heat. Add 1 cup of water and the quinoa. Bring to a boil, then reduce the heat to low. Cover and cook for 5 - 8 minutes until quinoa is cooked. Remove quinoa from heat and let stand for 5 minutes;
While quinoa is cooling, combine kale, bell pepper, sunflower seeds, and flax seeds in a large bowl.
In a separate bowl, make the dressing by mixing together olive oil, avocado oil, and lemon juice.
Add the cooled quinoa to the vegetable mix and combine completely.
Add dressing to salad and toss to cover evenly.
Add salt to taste.
