Date Shake Recipe

Refreshing and nutritious - you can toast the walnuts and soak the dates ahead of time!

Method:

  1. Preheat oven to 350 degrees. Toast walnuts on rimmed baking sheet, tossing once, until fragrant and slightly darkened in color (8 - 10 minutes). Let cool.
  2. Meanwhile, place dates in a small bowl and add 1 cup cold skim milk to cover. Soak 10 minutes to soften.
  3. Blend walnuts, dates with their soaking liquid, and cinnamon, in blender until a coarse paste forms. Add ice cream and 3/4 cup ice; blend until smooth. Divide between two glasses.
